Victoria Sponge
Here’s the recipe I use for a basic victoria sponge cake. This is what I use for the vast majoirity of my fairy cakes, cupcakes and layer cake bases.
125g caster sugar
125g butter
125g self raising flour
2 medium free range eggs
1tsp vanilla extract
2tbs milk
- Cream together the caster sugar and butter until smooth
- beat in the eggs
- add vanilla essence
- sieve half of the flour and fold into the mixture
- continue to seive all the flour and add to the mix
- beat in the milk
- spoon the mixture into cake cases or lined cake tin
- bake in a pre-heated 190° oven for 10-12mins or until golden brown
- remove from the oven and cool
