Just Carrot cake
This is a nice quick and basic carrot cake recipe. A big pet hate of mine is nuts in carrot cake… so here it is, no nuts, no raisins, just Carrot cake:
150g self raising flour
1tsp baking powder
1/4tsp cinnamon
125g butter
125g brown sugar
2 medium free range eggs
75g grated carrot
- pre-heat the oven to 180°c
- Seive together the flour, baking powder and cinnamon
- Add butter, sugar, carrot and eggs
- Beat together well
- Split evenly into 12 cake cases
- bake in the oven for 20-25mins
- remove from the oven and cool
(Although this recipe is for carrot cup cakes it could just as easily be made in two sandwich tins for a full size cake)
